Questions

Grease traps: common questions

What does a grease trap do?

It slows down the wastewater from sinks and dishwash areas so that fats, oils and grease float and separate before the water reaches the drain. That prevents blocked drains, bad smells and overflowing sewer lines.

Where is a grease trap installed?

Usually under or next to the pot wash and dishwash sinks, before the line joins the main drain, where it can be opened easily for cleaning.

How often should it be cleaned?

Empty the solids basket daily, and drain the collected grease regularly; a busy kitchen needs it more often. Clean the whole unit when grease builds up on the baffles.
